Ingredients
2 large boneless skinless chicken breasts
1 cup finely grated Parmesan cheese
1 cup panko breadcrumbs
2 large eggs
1 cup all-purpose flour
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon garlic powder
2 teaspoons Cajun seasoning
10 ounces Gemelli pasta
3 tablespoons unsalted butter
1 ½ cups heavy cream
½ teaspoon smoked paprika
½ cup grated Parmesan cheese (for sauce)
2 tablespoons chopped fresh parsley

Instructions
1. Cut chicken breasts into bite-sized pieces. Pat dry and season with salt, pepper, and garlic powder.
2. Set up three bowls: one with flour, one with beaten eggs, and one with a mix of Parmesan, panko, and Cajun seasoning.
3. Dredge chicken in flour, dip in eggs, then coat with Parmesan-breadcrumb mix.

5. Cook Gemelli pasta in salted water until al dente. Reserve ½ cup pasta water before draining.
