Ingredients

  • 4 boneless, skinless chicken breasts (or thighs)
  • 1 1/2 lbs baby potatoes, halved
  • 1 cup grated Parmesan cheese
  • 3/4 cup breadcrumbs (or panko for extra crunch)
  • 3 tbsp olive oil (divided)
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C) and lightly grease a sheet pan or line it with parchment paper.
  2. In a bowl, toss the baby potatoes with 1 1/2 tbsp olive oil, salt, and pepper. Spread them on one side of the sheet pan.
  3. In a separate bowl, combine Parmesan, breadcrumbs, garlic powder, paprika, Italian seasoning, salt, and pepper. Stir well.
  4. Pat the chicken dry, brush with 1 1/2 tbsp olive oil, and press each piece into the Parmesan mixture to coat evenly.
  5. Arrange the coated chicken on the empty side of the sheet pan.
  6. Bake for 25-30 minutes, stirring the potatoes halfway through. The chicken is ready when it reaches an internal temperature of 165°F (75°C).
  7. For extra crispiness, broil for 2-3 minutes before serving.
  8. Garnish with freshly chopped parsley and serve hot.
