Ingredients
- 4 boneless, skinless chicken breasts (or thighs)
- 1 1/2 lbs baby potatoes, halved
- 1 cup grated Parmesan cheese
- 3/4 cup breadcrumbs (or panko for extra crunch)
- 3 tbsp olive oil (divided)
- 1 tsp garlic powder
- 1 tsp paprika
- 1 tsp Italian seasoning
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 400°F (200°C) and lightly grease a sheet pan or line it with parchment paper.
- In a bowl, toss the baby potatoes with 1 1/2 tbsp olive oil, salt, and pepper. Spread them on one side of the sheet pan.
- In a separate bowl, combine Parmesan, breadcrumbs, garlic powder, paprika, Italian seasoning, salt, and pepper. Stir well.
- Pat the chicken dry, brush with 1 1/2 tbsp olive oil, and press each piece into the Parmesan mixture to coat evenly.
- Arrange the coated chicken on the empty side of the sheet pan.
- Bake for 25-30 minutes, stirring the potatoes halfway through. The chicken is ready when it reaches an internal temperature of 165°F (75°C).
