Ingredients

  • 1 cup (2 sticks) cold unsalted butter, cubed
  • 2 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 4 cups fresh peach slices (or well-drained canned/frozen)
  • 2 tablespoons cornstarch
  • 1/3 cup granulated sugar (for filling)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper.
  2. In a large bowl, mix flour, granulated sugar, brown sugar, cinnamon, and salt.
  3. Cut in cold butter until the mixture resembles coarse crumbs.
  4. Reserve 1 cup of the crumb mixture for topping. Press the remaining into the prepared pan.
  5. Bake crust for 12-15 minutes until lightly golden. Let cool slightly.
  6. In a separate bowl, toss peach slices with cornstarch, sugar, and vanilla.
  7. Spread peach mixture evenly over the cooled crust.
  8. Sprinkle reserved crumb mixture over the top.
  9. Bake for 35-40 minutes, until golden and bubbly.
  10. Cool completely before cutting into bars. Chill for cleaner cuts.
