Ingredients

2 cups chopped peaches (fresh, frozen, or canned and drained)

3 tablespoons brown sugar

2 tablespoons granulated sugar (plus more for cinnamon sugar)

1 teaspoon ground cinnamon

1 teaspoon vanilla extract

4 ounces cream cheese, softened

1 teaspoon vanilla extract (for cream cheese mixture)

1 tablespoon granulated sugar (for cream cheese mixture)

10 egg roll wrappers

2 tablespoons melted butter (for brushing)

1⁄4 cup granulated sugar (for cinnamon sugar coating)

1 teaspoon ground cinnamon (for cinnamon sugar coating)

Powdered sugar (optional, for dusting)

Oil for frying (vegetable or canola)

For glaze: 1⁄2 cup powdered sugar, 1–2 tablespoons milk, 1⁄4 teaspoon vanilla extract


Instructions

1. In a saucepan, combine chopped peaches, brown sugar, granulated sugar, cinnamon, and vanilla extract. Simmer over medium heat until soft and syrupy, about 8–10 minutes. Let cool completely.

2. In a bowl, beat cream cheese with 1 tablespoon sugar and 1 teaspoon vanilla extract until smooth.

3. Lay an egg roll wrapper with a corner facing you. Spread 1 tablespoon of cream cheese mixture in the center, then add 1 heaping tablespoon of peach filling.

4. Fold in the sides and roll tightly, sealing the edge with water. Repeat with remaining wrappers and filling.

5. Heat oil to 350°F (175°C) and fry egg rolls in batches for 2–3 minutes per side or until golden brown.

6. Mix 1⁄4 cup sugar with 1 teaspoon cinnamon. Brush warm egg rolls with melted butter and roll in cinnamon sugar.

7. Optional: Drizzle with glaze made from powdered sugar, milk, and vanilla. Dust with powdered sugar if desired.

8. Serve warm for best texture and flavor.
