Ingredients
1.5 cups creamy peanut butter
0.5 cup unsalted butter, softened
1 teaspoon vanilla extract
3.5 to 4 cups powdered sugar, sifted
2 cups semi-sweet chocolate chips
2 tablespoons shortening (optional)
Pinch of salt (optional, if using unsalted peanut butter)
Sea salt flakes (optional, for garnish)
Instructions
1. In a large mixing bowl, combine creamy peanut butter, softened butter, and vanilla extract. Mix until smooth using a hand or stand mixer.
2. Gradually add powdered sugar, one cup at a time, until a thick, pliable dough forms. You may not need the full amount.
3. Use a cookie scoop or tablespoon to portion the dough, then roll into 1-inch balls. Place on a parchment-lined baking sheet.
4. Chill the peanut butter balls in the fridge for at least 30 minutes, or freeze for 15 minutes until firm.
5. In a microwave-safe bowl or double boiler, melt chocolate chips with shortening (if using) until smooth and glossy.
6. Insert a toothpick into each chilled ball and dip ¾ of it into the melted chocolate, leaving the top visible.
7. Tap off excess chocolate and place back on the tray. Optionally smooth over the toothpick hole.
8. Let the chocolate set completely at room temperature or refrigerate for 20 minutes before storing.
Notes
Use processed peanut butter like Jif or Skippy for best texture and stability.
Chill the peanut butter balls before dipping—this helps the chocolate set properly.
For a glossy finish, melt chocolate slowly and stir in a bit of shortening or coconut oil.
