Ingredients

  • 1 1/2 cups raw pecan halves, toasted and chopped
  • 1 cup graham cracker crumbs
  • 1/3 cup brown sugar
  • 1/4 teaspoon salt
  • 1/4 cup maple syrup (or corn syrup)
  • 1/4 cup unsalted butter, melted
  • Optional: 1/2 teaspoon vanilla extract or cinnamon
  • Optional: 1/2 cup melted chocolate for coating

Instructions

  1. Toast pecans in a 350°F oven for 5-7 minutes, stirring halfway. Cool completely.
  2. In a food processor, combine graham cracker crumbs, brown sugar, and salt. Pulse to mix.
  3. Add maple syrup and melted butter (plus optional vanilla/cinnamon). Blend until sticky and thick.
  4. Fold in chopped toasted pecans with a spatula.
  5. Scoop out 1 to 1.5 tbsp portions and roll into balls.
  6. Chill on a parchment-lined tray for at least 30 minutes.
  7. (Optional) Dip chilled balls in melted chocolate and refrigerate again until set.
  8. Store in an airtight container in fridge for up to 7 days or freeze for up to 3 months.
