Ingredients

  • 1 1/2 cups chopped pecans (toasted, if desired)
  • 1 cup crushed graham crackers or vanilla wafers
  • 1/2 cup brown sugar
  • 1/3 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup semi-sweet or dark chocolate chips (for drizzling)

Instructions

  1. Toast the pecans in a dry skillet over medium heat for 3–5 minutes, stirring frequently. Let cool, then chop finely.
  2. In a mixing bowl, combine chopped pecans, crushed graham crackers, brown sugar, and salt.
  3. Add maple syrup and vanilla extract. Mix until the mixture is sticky and holds together.
  4. Roll into 1-inch balls using about 1 tablespoon of mixture per ball.
  5. Place the balls on a parchment-lined tray and refrigerate for at least 30 minutes.
  6. Melt the chocolate chips in the microwave in 20-second intervals, stirring until smooth.
  7. Drizzle the melted chocolate over the chilled balls.
  8. Refrigerate again for 10–15 minutes or until the chocolate is set.
