Ingredients
300g sirloin steak (or ribeye)
1 tablespoon olive oil
1 tablespoon Cajun seasoning
1 teaspoon garlic powder
1 teaspoon onion powder
0.5 teaspoon paprika (optional)
250g penne pasta
200g Velveeta four-cheese blend (cubed)
0.75 cup heavy cream
2 tablespoons butter
0.5 teaspoon black pepper
1 teaspoon Italian seasoning or dried parsley
Instructions
1. Cut the beef into 1–1.5 inch cubes and place in a bowl. Add olive oil, Cajun seasoning, garlic powder, onion powder, and paprika. Toss well to coat and let sit at room temperature.
2. Bring salted water to a boil. Cook penne until al dente according to package instructions. Drain and set aside (do not rinse).
3. Heat a cast iron skillet over medium-high heat. Sear beef cubes in a single layer, cooking 2–3 minutes per side until a crust forms and the inside is cooked to your preference. Remove and let rest.
4. In a saucepan over low heat, melt butter, then add heavy cream. Stir in cubed Velveeta until smooth and melted. Season with black pepper and herbs.
5. Add cooked penne to the cheese sauce and mix until evenly coated.
6. Serve creamy pasta on a plate and top or side with Cajun beef bites. Garnish if desired and serve hot.
Notes
Pat beef cubes dry before seasoning to get the best sear.
Keep the cheese sauce over low heat to avoid breaking or curdling.
Rest the beef bites before slicing or serving for juicier texture.
