Ingredients

For the Parmesan Chicken:

  • 2 large boneless, skinless chicken breasts, pounded
  • ½ cup grated Parmesan cheese
  • ½ cup panko breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and black pepper, to taste
  • 1 large egg, beaten
  • 23 tablespoons olive oil

For the Pesto Pasta:

  • 12 oz rotini pasta
  • ¾ cup basil pesto
  • ¼ cup reserved pasta water
  • 2 tablespoons grated Parmesan cheese
  • Fresh basil leaves (optional)
  • Extra Parmesan for garnish

Optional Add-ins:

  • Cherry tomatoes, halved
  • Baby spinach
  • Red pepper flakes

Instructions

  1. Pound the chicken to even thickness.
  2. In a bowl, mix Parmesan, panko, garlic powder, Italian seasoning, salt, and pepper.
  3. Dip chicken in beaten egg, then coat with the Parmesan mixture.
  4. Heat olive oil in a skillet and cook chicken until golden and cooked through.
  5. Bring a large pot of salted water to a boil and cook pasta according to package instructions. Reserve ½ cup pasta water before draining.
  6. Toss pasta with pesto and Parmesan cheese, adding reserved water as needed.
  7. Slice chicken and place on top of pesto pasta.
