Description

Craving a golden, gooey comfort dish that can swing between side and dessert? This Pineapple Bake is your go-to! With its warm, buttery texture, a sweet pineapple burst in every bite, and an irresistibly caramelized top, it’s perfect for both family dinners and festive gatherings. Whether you’re looking for easy dinner ideas, a quick breakfast, or a cozy holiday favorite, this easy recipe shines on any table. It’s a classic Southern-inspired dish that doubles as a sweet side or comforting dessert — the kind of food idea that always disappears fast.

Ingredients

1 can (20 oz) crushed pineapple in juice, lightly drained

1 cup granulated sugar

2 large eggs, beaten

1/2 cup unsalted butter, melted

5 slices white sandwich bread, crusts removed and cubed

1 teaspoon vanilla extract

2 tablespoons brown sugar (optional for topping)

Instructions

1. Preheat your oven to 350°F (175°C) to ensure even baking and browning.

2. Remove crusts from bread slices and cube them into 1/2-inch pieces.

3. In a medium bowl, whisk eggs and sugar until smooth. Add vanilla and melted butter.

4. Fold in the lightly drained crushed pineapple. Keep some juice for moisture.

5. Gently stir in bread cubes until coated; let sit 5–10 minutes to absorb.

6. Grease an 8×8 or 9×9-inch baking dish. Pour mixture evenly into it.

7. Optionally sprinkle brown sugar over the top for a caramelized finish.

8. Bake for 45–50 minutes until golden brown and set in the center.

9. Let cool slightly and serve warm, room temp, or chilled.

Notes

Let the bread soak before baking — it improves the texture significantly.

Lightly drain the pineapple; don’t press it dry to maintain perfect moisture.

Add a sprinkle of brown sugar on top for an extra caramelized crust.
