Ingredients

1 ½ lbs boneless skinless chicken breasts

2 cups fresh pineapple chunks

¼ cup soy sauce

3 tablespoons honey

2 tablespoons olive oil

1 tablespoon rice vinegar or apple cider vinegar

2 cloves garlic minced

1 teaspoon grated fresh ginger

½ teaspoon black pepper

Optional: 1 red bell pepper cut into chunks

Optional: 1 red onion cut into wedges

Optional: chopped chives or green onions for garnish


Instructions

1. In a medium bowl, whisk together soy sauce, honey, olive oil, vinegar, garlic, ginger, and pepper to create the marinade.

2. Add chicken chunks to a resealable bag or shallow bowl, pour in the marinade, and mix well. Refrigerate for at least 20 minutes or up to 4 hours.

3. If using wooden skewers, soak them in water for 30 minutes.

4. Thread the marinated chicken and pineapple chunks onto the skewers, alternating pieces. Add bell peppers or onions if desired.

5. Preheat a grill or grill pan over medium-high heat and lightly oil the grates.

6. Place skewers on the grill and cook for 10–12 minutes, turning every 2–3 minutes, until the chicken is cooked through and grill marks appear.

7. Brush with reserved marinade during grilling if desired, as long as it hasn’t touched raw chicken.

8. Remove skewers from heat, let rest briefly, then garnish with chopped chives or green onions and serve hot.
