Ingredients
- 1 lb ground beef
- 3–4 medium potatoes, diced
- 1 cup frozen peas
- 1 cup frozen carrots
- 1 can (10.5 oz) cream of mushroom soup
- 1 medium onion, chopped
- 2 cups shredded cheddar cheese
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- Brown the ground beef in a skillet over medium heat, breaking it into crumbles. Drain excess fat.
- Add chopped onion to the beef and cook until soft, about 3–4 minutes. Stir in garlic powder, salt, and pepper.
- Add the cream of mushroom soup, peas, and carrots, then stir to combine. Let simmer for 5 minutes.
- Layer the diced potatoes in a greased 9×13-inch baking dish.
- Spread the beef and vegetable mixture evenly over the potatoes.
- Top with shredded cheddar cheese.
- Bake at 350°F (175°C) for 30–35 minutes until cheese is golden and bubbly, and potatoes are tender.
