Ingredients

  • 1 lb ground beef
  • 34 medium potatoes, diced
  • 1 cup frozen peas
  • 1 cup frozen carrots
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 medium onion, chopped
  • 2 cups shredded cheddar cheese
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Brown the ground beef in a skillet over medium heat, breaking it into crumbles. Drain excess fat.
  2. Add chopped onion to the beef and cook until soft, about 3–4 minutes. Stir in garlic powder, salt, and pepper.
  3. Add the cream of mushroom soup, peas, and carrots, then stir to combine. Let simmer for 5 minutes.
  4. Layer the diced potatoes in a greased 9×13-inch baking dish.
  5. Spread the beef and vegetable mixture evenly over the potatoes.
  6. Top with shredded cheddar cheese.
  7. Bake at 350°F (175°C) for 30–35 minutes until cheese is golden and bubbly, and potatoes are tender.
