- 1 small onion, finely chopped
- 2 garlic cloves, minced

- 2 medium carrots, sliced
- 1 cup frozen peas
- 6 cups low-sodium chicken or vegetable broth
- 2 tablespoons soy sauce
- 1 teaspoon rice vinegar
- 12–16 frozen potstickers (any variety)
- 2 cups fresh spinach or baby bok choy (optional)
- Chopped fresh cilantro or scallions (for garnish)
Instructions
- Heat sesame oil in a large pot over medium heat. Add onion and cook until translucent, about 3–4 minutes.
- Stir in garlic and ginger; cook for 1–2 minutes until fragrant.
- Add sliced carrots and cook for 2–3 minutes.
- Pour in broth and bring to a simmer.
- Stir in soy sauce and rice vinegar; adjust seasoning to taste.
- Gently add frozen potstickers to the simmering broth. Cook for 6–8 minutes until heated through.
- Add frozen peas and cook for 2 more minutes.
- If using greens, stir them in now and cook just until wilted.
