1 1/4 cups all-purpose flour

1/2 cup granulated sugar

1 1/2 teaspoons baking powder

1/4 teaspoon baking soda

1/2 cup unsweetened almond milk

1 tablespoon apple cider vinegar

1/4 cup melted coconut oil

1 teaspoon vanilla extract

1 cup powdered sugar

23 tablespoons plant milk

1/2 teaspoon vanilla extract

vegan rainbow sprinkles (optional)


Instructions

1. Preheat your oven to 350°F (175°C) and grease a donut pan with oil or spray.

2. In a medium bowl, whisk together almond milk and apple cider vinegar. Let sit for 5 minutes.

3. Stir in melted coconut oil and vanilla extract to the almond milk mixture.

4. In a large bowl, sift together flour, sugar, baking powder, baking soda, and salt.

5. Pour the wet mixture into the dry ingredients and gently mix until just combined. Do not overmix.

6. Transfer batter to a piping bag or zip-top bag and pipe into donut pan cavities, filling each about 3/4 full.

7. Bake for 12–14 minutes until the donuts spring back when touched and a toothpick comes out clean.

8. Let donuts cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

9. Whisk together powdered sugar, vanilla extract, and plant milk to form a thick but pourable glaze.
