1/2 teaspoon paprika
2 tablespoons olive oil
4 tablespoons unsalted butter
5 garlic cloves finely minced
1/2 cup chicken broth
1 tablespoon fresh lemon juice
1 tablespoon chopped fresh parsley
1 teaspoon flour or cornstarch optional
Instructions
1. Pat chicken breasts dry and season with salt pepper and paprika. Slice horizontally if thick.
2. Heat olive oil and 1 tablespoon butter in skillet over medium high heat and sear chicken 4 to 5 minutes per side until golden. Remove and set aside.
3. Reduce heat to medium melt remaining butter and sauté garlic 30 seconds.
4. Add chicken broth and scrape pan to release browned bits. Simmer 3 to 4 minutes.
5. Stir in lemon juice and parsley. Add cornstarch slurry if thicker sauce desired.
6. Return chicken to skillet and simmer 2 minutes to coat in sauce.
7. Serve hot with extra parsley.
Notes
For a creamier sauce stir in 1 tablespoon heavy cream at the end.
Fresh garlic and fresh lemon juice provide the best flavor.
Let the chicken rest a few minutes after cooking to keep it juicy.
