Ingredients
1 cup Medjool dates, pitted
1/2 cup creamy almond butter or peanut butter
1/2 cup rolled oats
1/2 teaspoon vanilla extract
1/4 teaspoon sea salt
3/4 cup finely chopped toasted pecans
1/4 cup chopped dark chocolate or mini chocolate chips (optional)
caramel sauce or melted chocolate (optional, for drizzling)
whole pecans (optional, for garnish)
Instructions
1. Toast the pecans in a dry skillet over medium heat for 3–5 minutes until fragrant. Let them cool, then chop finely.
2. In a food processor, blend the pitted Medjool dates, almond butter, rolled oats, vanilla extract, and sea salt until thick and sticky.
3. Transfer mixture to a bowl and mix in half of the chopped toasted pecans and chocolate chips, if using.
4. Use a cookie scoop or tablespoon to portion and roll into smooth balls using your hands.
5. Roll each ball in remaining chopped pecans, pressing gently so they adhere. Add a whole pecan on top if desired.
6. Optional: drizzle with melted chocolate or caramel for extra decadence.
7. Place balls on a parchment-lined tray and chill in the refrigerator for at least 30 minutes to firm up.
