Ingredients
1 cup unsalted butter, softened
1 cup granulated sugar
1 cup brown sugar
2 large eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
2 cups old-fashioned rolled oats
2 cups Rice Krispies cereal
1 cup shredded coconut
1 cup chocolate chips or raisins
Instructions
1. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
2. Beat in the eggs one at a time, then stir in the vanilla extract until fully combined.
3. In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to the wet mixture and mix until just combined.
4. Fold in rolled oats, Rice Krispies, and shredded coconut until evenly distributed.
5. Add chocolate chips or raisins (or both!) and gently mix into the dough.
6. (Optional) Chill the dough for 30 minutes to enhance flavor and texture.
7. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
8. Scoop tablespoon-sized balls of dough and place 2 inches apart on the baking sheet.
9. Bake for 10–12 minutes, until edges are golden and centers still slightly soft.
10. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
Chilling the dough helps prevent spreading and intensifies flavor.
Use parchment or silicone mats to keep cookies from sticking or over-browning.
You can freeze the dough balls and bake straight from frozen for fresh cookies anytime.
