Ingredients
Dry Ingredients:
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 (3.4 oz) package instant vanilla pudding mix
Wet Ingredients:
- 3/4 cup unsalted butter, softened
- 1/2 cup creamy peanut butter
- 3/4 cup light brown sugar, packed
- 1/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
Mix-ins:
- 1 cup Reese’s peanut butter cups, chopped
- 1/2 cup butterscotch chips
- 1/2 cup milk chocolate chips
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Mix dry ingredients: In a medium bowl, whisk together flour, baking soda, salt, and pudding mix. Set aside.
- Cream butter & sugars: In a large bowl, beat butter, peanut butter, brown sugar, and granulated sugar until smooth and creamy.
- Add eggs & vanilla: Mix in eggs, one at a time, followed by vanilla extract. Beat until combined.
- Combine dry and wet ingredients: Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Fold in mix-ins: Gently stir in Reese’s peanut butter cups, butterscotch chips, and chocolate chips.
- Scoop and arrange: Drop dough balls onto prepared baking sheets, spacing them 2 inches apart.
- Bake for 10-12 minutes, until the edges are set. The centers may look slightly underbaked but will firm up as they cool.
- Cool & enjoy: Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
