  • 2 Persian or 1 English cucumber, sliced into sticks or thick rounds
  • Juice of 2 limes
  • 1/2 teaspoon chili flakes (or to taste)
  • 1/4 teaspoon salt
  • 2 tablespoons chopped fresh cilantro or parsley
  • 1 teaspoon toasted sesame seeds (optional)

Instructions

  • 1 medium ripe pineapple, peeled, cored, and cut into sticks or chunks
  • 2 Persian or 1 English cucumber, sliced into sticks or thick rounds
  • Juice of 2 limes
  • 1/2 teaspoon chili flakes (or to taste)
  • 1/4 teaspoon salt

  • 1 teaspoon toasted sesame seeds (optional)

Instructions:

  1. Peel and core the pineapple, then slice it into sticks or bite-sized chunks.
  2. Wash and cut the cucumber into evenly sized sticks or rounds.
  3. In a small bowl, combine lime juice, chili flakes, and salt. Mix well.
  4. Place the pineapple and cucumber in a large bowl.
  5. Drizzle the lime-chili mixture over the fruit and vegetables.
  6. Gently toss everything together to coat evenly.
  7. Transfer to a serving dish.
  8. Garnish with chopped herbs and sesame seeds if using.
