Ingredients

Roasted Strawberries:

  • 1 ½ cups fresh strawberries, hulled and halved
  • 1 tbsp honey or maple syrup
  • ½ tsp vanilla extract
  • Pinch of sea salt

Whipped Ricotta:

  • 1 cup whole-milk ricotta cheese
  • 12 tsp lemon zest
  • 1 tbsp honey (optional)
  • Pinch of sea salt

Toast Base:

  • 4 slices thick-cut bread (brioche, sourdough, etc.)
  • Butter or olive oil for toasting (optional)

Optional Garnish:

  • Fresh mint leaves
  • Cracked black pepper
  • Powdered sugar
  • Extra honey or balsamic glaze

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss strawberries with honey, vanilla, and salt. Spread evenly on the sheet.
  3. Roast strawberries for 18–20 minutes until soft and caramelized. Let cool.
  4. In a mixing bowl, whip ricotta, lemon zest, honey, and salt until fluffy.
  5. Toast the bread slices in a skillet with butter/oil or in a toaster until crisp.
  6. Spread whipped ricotta on each toast slice.
  7. Top with roasted strawberries.
  8. Garnish with mint, black pepper, powdered sugar, or drizzles as desired.
  9. Serve immediately while warm and crisp.
