Ingredients
Roasted Strawberries:
- 1 ½ cups fresh strawberries, hulled and halved
- 1 tbsp honey or maple syrup
- ½ tsp vanilla extract
- Pinch of sea salt
Whipped Ricotta:
- 1 cup whole-milk ricotta cheese
- 1–2 tsp lemon zest
- 1 tbsp honey (optional)
- Pinch of sea salt
Toast Base:
- 4 slices thick-cut bread (brioche, sourdough, etc.)
- Butter or olive oil for toasting (optional)
Optional Garnish:
- Fresh mint leaves
- Cracked black pepper
- Powdered sugar
- Extra honey or balsamic glaze
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Toss strawberries with honey, vanilla, and salt. Spread evenly on the sheet.
- Roast strawberries for 18–20 minutes until soft and caramelized. Let cool.
- In a mixing bowl, whip ricotta, lemon zest, honey, and salt until fluffy.
- Toast the bread slices in a skillet with butter/oil or in a toaster until crisp.
- Spread whipped ricotta on each toast slice.
- Top with roasted strawberries.
- Garnish with mint, black pepper, powdered sugar, or drizzles as desired.
- Serve immediately while warm and crisp.
