Ingredients

6 cups rice or corn Chex cereal

1 cup semi-sweet or dark chocolate chips

1/2 cup caramel bits or soft caramels

1 cup powdered sugar

3/4 cup sweetened shredded coconut, toasted

2 tablespoons butter

1 teaspoon vanilla extract

2 tablespoons heavy cream

Instructions

1. Preheat oven to 350°F and spread shredded coconut on a baking sheet. Toast for 5-7 minutes, stirring halfway through, until golden. Let cool.

2. In a microwave-safe bowl, melt chocolate chips and butter in 30-second intervals, stirring until smooth. Stir in vanilla extract.

3. Add Chex cereal to a large bowl. Pour the melted chocolate mixture over it and gently fold to coat evenly.

4. Place the coated cereal into a large zip-top bag. Add powdered sugar, seal, and shake until well coated.

5. Melt caramel bits and heavy cream in a small saucepan over low heat, stirring until smooth. Let cool slightly.

6. Spread the coated cereal on a parchment-lined sheet. Drizzle with caramel and sprinkle toasted coconut on top.

7. Let the mix set at room temperature or refrigerate until firm.

8. Once set, transfer to a serving bowl or airtight container.

Notes

Use fresh cereal to keep the snack crispy.

Let the caramel cool slightly before drizzling to avoid sogginess.

Store in an airtight container in a cool place to keep it fresh.
