Ingredients

1 pound breakfast sausage, cooked and drained

4 cups frozen hash browns, unthawed

8 large eggs

1 cup whole milk

1 ½ cups shredded cheddar cheese, divided

1 red bell pepper, diced

¼ cup green onions, sliced

1 cup fresh spinach, chopped (optional)

1 teaspoon salt

½ teaspoon black pepper


Instructions

1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.

2. In a skillet over medium heat, brown the sausage until fully cooked. Drain excess grease.

3. Spread frozen hash browns evenly in the bottom of the baking dish.

4. Layer the cooked sausage over the hash browns.

5. Sprinkle diced red bell pepper, green onions, and chopped spinach (if using) on top.

6. Add 1 cup of shredded cheddar cheese over the mixture.

7. In a bowl, whisk together eggs, milk, salt, and pepper until fully blended.

8. Pour the egg mixture evenly over the layers in the baking dish.

9. Sprinkle the remaining ½ cup of cheddar cheese on top.

10. Bake uncovered for 40–45 minutes or until the center is set and the top is golden.

11. Let it rest for 5–10 minutes before slicing and serving.

Notes

Letting the casserole sit after baking helps it slice cleanly and hold its shape.

You can prepare the casserole the night before and bake it fresh in the morning.

For extra crispiness, bake on the lower oven rack for the last 10 minutes.
