Ingredients
2 large chicken breasts
16 oz potato gnocchi
1 cup heavy cream
4 cloves garlic, minced
1/2 cup grated Parmesan cheese
2 cups fresh spinach
1/3 cup sun-dried tomatoes, chopped
2 tablespoons olive oil
1 tablespoon butter
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon Italian seasoning
2 tablespoons chopped fresh parsley (for garnish)
Instructions
1. Slice chicken breasts into strips or bite-sized pieces. Season with salt, pepper, and Italian seasoning.
2. In a large skillet, heat olive oil and butter over medium-high heat. Sear the chicken until golden brown and cooked through. Remove and set aside.
3. Reduce heat to medium. Add garlic to the same skillet and sauté for 30 seconds until fragrant.
4. Pour in the heavy cream. Stir in Parmesan, Italian seasoning, and adjust salt and pepper. Let simmer for 3–5 minutes until slightly thickened.
5. Add gnocchi directly to the sauce. Cook uncovered for 5–7 minutes until gnocchi softens and sauce thickens.
6. Stir in spinach and sun-dried tomatoes. Cook until spinach wilts.
7. Return cooked chicken to the pan. Stir everything together and simmer for 2–3 more minutes.
8. Garnish with chopped parsley and more Parmesan. Serve hot.
Notes
For extra richness, add a splash of white wine to the cream sauce before simmering.
You can swap spinach with kale or arugula if preferred.
Don’t rush the gnocchi simmering stage—it helps them absorb the sauce and get perfectly tender.
