Ingredients

  • 1 lb large raw shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • Salt to taste
  • Juice of 1 lime (plus wedges for serving)
  • 2 cups cooked white rice (jasmine or basmati)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 cup chopped tomatoes or pico de gallo
  • 1 cup guacamole or mashed avocado
  • 2 tbsp chopped fresh cilantro (optional)

Instructions

  1. Cook rice according to package instructions. Fluff and set aside.
  2. In a bowl, toss shrimp with olive oil, chili powder, paprika, garlic powder, salt, and lime juice.
  3. Heat a skillet over medium-high heat. Cook shrimp for 2–3 minutes per side until opaque and slightly charred.
  4. Warm black beans and corn in separate pans or in the microwave.
  5. Prepare toppings: chop tomatoes or make pico, mash avocado with lime and salt for guacamole.
  6. Assemble bowls: start with rice, then layer shrimp, beans, corn, tomatoes, and guacamole.
  7. Garnish with cilantro and a squeeze of lime. Serve immediately or pack for later.
