Whether you’re prepping for a weekday lunch, planning a hearty dinner, or needing a crowd-pleasing dish to bring to a gathering, this casserole checks every box for quick prep, big flavor, and satisfying leftovers.

Ingredients

12 oz penne pasta

2 cups cooked chicken breast, chopped or shredded

2 cups Alfredo sauce (homemade or store-bought)

1 1/2 cups shredded mozzarella cheese

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

2 tbsp butter

1/2 cup heavy cream (if making homemade Alfredo)

1/2 tsp salt

1/2 tsp black pepper

1 tbsp fresh parsley, chopped (optional)

Instructions

1. Boil penne pasta in salted water until just al dente. Drain and set aside.

2. Cook or shred your chicken. If using raw, season and cook thoroughly before chopping.

3. If making Alfredo sauce from scratch, sauté garlic in butter, add cream, and stir in Parmesan until melted and smooth. Season with salt and pepper.

4. In a large bowl, combine cooked pasta, chicken, Alfredo sauce, and half the mozzarella. Mix well.

5. Preheat oven to 375°F (190°C) and grease a 9×13 inch baking dish.

6. Spread the mixture into the baking dish. Top with remaining mozzarella and extra Parmesan.

7. Bake uncovered for 20–25 minutes until bubbly. Broil for 2–3 minutes for a golden top.

8. Let rest for 5 minutes before serving. Garnish with parsley if desired.

Notes

Don’t overcook the pasta—it will continue baking in the oven.

Use freshly grated Parmesan for better melt and flavor.

To save time, use pre-cooked or rotisserie chicken.
