Ingredients
2 pounds Yukon Gold or Russet potatoes
3 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder (optional)
1 teaspoon chopped fresh rosemary or 1/2 teaspoon dried (optional)
Instructions
1. Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper or foil.
2. Peel the potatoes if desired. Cut into 1 to 1.5-inch chunks for even cooking.
3. Boil the potatoes in salted water for 7–8 minutes until just tender. Drain and let them steam dry.
4. In a large bowl, toss potatoes with olive oil, salt, pepper, garlic powder, and rosemary.
5. Spread potatoes on the baking sheet in a single layer, without overcrowding.
6. Roast for 30–40 minutes, flipping halfway through, until golden and crispy. Broil for 2–3 minutes for extra crispiness if desired.
7. Serve hot, with extra herbs or dipping sauces if you like.
Notes
Let the potatoes steam dry after boiling—this helps them roast instead of steam.
Don’t skip flipping halfway through roasting for even crisping.
If using garlic, use garlic powder to prevent burning during high heat roasting.
