Description

A cozy and creamy slow cooker soup packed with cheese tortellini, sweet carrots, and tender spinach in a rich herb-seasoned broth. Perfect for cold nights and effortless comfort meals.


Ingredients

  • 1 package (20 oz) refrigerated cheese tortellini
  • 3 medium carrots, peeled and sliced
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • Salt and black pepper, to taste
  • 2 cups baby spinach (optional)
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Add carrots, onion, garlic, vegetable broth, Italian seasoning, salt, and pepper to the slow cooker. Stir well.
  2. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours until vegetables are tender.
  3. Stir in tortellini and heavy cream. Cook for an additional 30 minutes (40–45 minutes if using frozen tortellini).
  4. Add baby spinach during the last 5 minutes of cooking. Stir until wilted.
  5. Taste and adjust seasoning if needed. Ladle into bowls.
  6. Garnish with fresh parsley and serve hot.
