Ingredients
3–4 lb chuck roast
1 large onion, sliced
3 cloves garlic, minced
3 cups low-sodium beef broth
2 tablespoons Worcestershire sauce
1 tablespoon soy sauce
1 bay leaf
1 teaspoon dried thyme
6 hoagie or French rolls
6 slices provolone cheese
Salt and pepper to taste
Instructions
1. Season the chuck roast generously with salt and pepper
2. (Optional) Sear the roast in a hot skillet until browned on all sides
3. Add onion, garlic, broth, Worcestershire sauce, soy sauce, bay leaf, and thyme to slow cooker
4. Place roast inside and cook on low for 8 hours or high for 4–5 hours
5. Remove beef and shred using two forks
6. Return shredded beef to the broth
7. Toast rolls in oven at 375°F until slightly crisp
8. Add beef to rolls, top with provolone, and broil until melted
9. Strain broth and serve as au jus
10. Serve hot and enjoy
