Tender beef bites slow-cooked in a rich garlic butter sauce with baby potatoes. This easy one-pot meal is full of flavor, perfect for busy weeknights or cozy family dinners. Ingredients

  • 2 lbs beef stew meat or chuck roast, cut into bite-sized pieces
  • 1.5 lbs baby potatoes, halved
  • 4 tbsp unsalted butter, melted
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Fresh parsley, for garnish (optional)



Instructions

  1. (Optional) Heat a skillet over medium-high heat and sear the beef bites for 2-3 minutes on each side until browned.
  2. Place the baby potatoes at the bottom of the slow cooker.
  3. In a small bowl, mix melted butter, minced garlic, Worcestershire sauce, Italian seasoning, salt, and black pepper.
  4. Add the beef bites to the slow cooker and pour the garlic butter mixture over them.
  5. Pour in the beef broth and stir to coat everything evenly.
  6. Cover and cook on low for 6-8 hours or high for 3-4 hours until the beef is tender.
  7. Garnish with fresh parsley before serving. Enjoy!
