Ingredients

  • 1 lb sirloin or ribeye steak, cut into bite-sized cubes
  • 9 oz cheese tortellini (fresh or frozen)
  • 1 cup Velveeta cheese, cubed
  • 1/2 cup heavy cream
  • 1/2 cup beef broth
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 2 garlic cloves, minced
  • Salt and black pepper, to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Pat steak dry and season with salt and pepper.
  2. Heat olive oil and 1 tbsp butter in a skillet over medium-high heat.
  3. Sear steak bites in batches for 1-2 minutes per side until browned. Remove and set aside.
  4. Lower heat to medium, add remaining butter and garlic. Sauté for 30 seconds.
  5. Deglaze pan with beef broth, scraping up browned bits.
  6. Add heavy cream and Velveeta, stirring until cheese is fully melted and sauce is smooth.
  7. In a separate pot, cook tortellini according to package instructions. Drain.
  8. Add tortellini to cheese sauce and stir to coat.
  9. Return steak bites to skillet and stir gently to combine.
  10. Simmer for 2-3 minutes. Garnish with parsley and serve hot.
