Ingredients

1 1/2 cups all-purpose flour

3/4 cup cocoa powder

1 cup granulated sugar

1 teaspoon baking soda

1/2 teaspoon baking powder

1/4 teaspoon salt

2 large eggs

1 cup buttermilk

1/2 cup vegetable oil

2 teaspoons vanilla extract

1/2 cup hot water or coffee

1 cup unsalted butter, softened

3 cups powdered sugar

23 tablespoons heavy cream or milk

12 mini white chocolate truffles or marshmallows

24 mini chocolate chips or edible black pearls

12 orange sprinkles or candies for noses

12 chocolate Rolos or similar candies for hats

24 pretzel sticks or chocolate sticks for arms


Instructions

1. Preheat oven to 350°F (175°C) and line a muffin tin with paper cupcake liners.

2. In a large bowl, whisk together flour, cocoa powder, sugar, baking soda, baking powder, and salt.

3. In a separate bowl, whisk together eggs, buttermilk, oil, and vanilla extract.

4. Add the wet ingredients to the dry, mixing until combined, then stir in hot water or coffee.

5. Pour batter into cupcake liners, filling each about 2/3 full.

6. Bake for 18–20 minutes or until a toothpick inserted comes out clean. Cool completely.

7. For the frosting, beat softened butter until smooth. Gradually add powdered sugar and mix until fluffy.

8. Add heavy cream and vanilla, adjusting for desired consistency.

9. Pipe a swirl of frosting on each cooled cupcake using a large round tip.

10. Place a truffle or marshmallow on top as the snowman head.

11. Add mini chocolate chips or pearls for eyes and buttons, orange sprinkle for the nose.

12. Insert pretzel sticks as arms and top with a chocolate candy hat.

Notes

Make sure cupcakes are completely cool before decorating to prevent frosting from melting.

Use a toothpick to anchor snowman heads if they feel unstable.

Chill the frosting slightly before piping for a clean, firm swirl.
