Description

Ingredients

  • 1 lb ground meat (beef, turkey, or plant-based)
  • 1 can black beans, drained
  • 1 cup corn kernels (fresh or frozen)
  • 1 bell pepper, diced
  • 1/2 onion, diced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 box cornbread mix (or homemade cornbread ingredients)
  • 1 egg
  • 1/2 cup milk
  • 2 tablespoons oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, cook the ground meat over medium heat until browned. Drain any excess fat.
  3. Add the diced onion, bell pepper, and corn. Cook for 5 minutes until softened.
  4. Stir in the black beans and season with chili powder, cumin, garlic powder, salt, and pepper. Cook for 2-3 more minutes.
  5. Prepare the cornbread mix according to the package instructions.
  6. Spread the meat and vegetable filling evenly in the skillet.
  7. Pour the cornbread batter over the filling, spreading it out to cover the entire surface.
  8. Bake in the preheated oven for 25-30 minutes or until the cornbread topping is golden brown and cooked through.
  9. Let it cool for a few minutes before serving.
