Ingredients

  • 1 cup yellow cornmeal (stone-ground preferred)
  • 1/2 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons granulated sugar
  • 1 large egg
  • 3/4 cup buttermilk (room temperature)
  • 1/4 cup unsalted butter, melted
  • 2 tablespoons honey (for glaze)
  • 1 tablespoon melted butter (for glaze)
  • Fresh chopped parsley (optional, for garnish)

Instructions

  1. Preheat oven to 400°F (200°C). Grease a mini muffin pan or silicone mold generously.
  2. In a large bowl, whisk together cornmeal, flour, baking powder, salt, and sugar.
  3. In a separate bowl, whisk together the egg, buttermilk, and melted butter until smooth.
  4. Pour wet mixture into dry ingredients and stir until just combined. Do not overmix.
  5. Fill each cavity of your prepared pan about 3/4 full with the batter.
  6. Bake for 12–15 minutes, or until tops are golden and a toothpick comes out clean.
  7. While poppers are still warm, brush them with a mixture of melted butter and honey.
  8. Optionally, sprinkle with chopped parsley and serve warm.
