Grilled, spice-rubbed chicken strips paired with a refreshing mixed salad and finished with a tangy yogurt sauce. A vibrant, balanced dish that’s perfect for quick meals or weekly prep.


Ingredients

For the Chicken:

  • 2 boneless, skinless chicken breasts (sliced into strips)
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp ground cumin
  • 1/2 tsp garlic powder
  • 1/4 tsp chili powder
  • Salt and black pepper to taste

For the Salad:

  • 2 cups mixed salad greens
  • 1 cup cherry tomatoes
  • A handful of fresh basil leaves
  • 1/2 cup sliced cucumber (optional)

For the Yogurt Sauce:

  • 1/2 cup Greek yogurt
  • 1 tsp lemon juice
  • 1/2 tsp dried mint or oregano
  • 1 garlic clove, finely minced
  • Salt and pepper to taste

Optional Toppings:

  • Crumbled feta
  • Toasted seeds or nuts
  • Olive oil or balsamic glaze

Instructions

  1. Combine olive oil and all spices in a bowl. Add chicken strips and toss to coat. Marinate for at least 15 minutes.
  2. Heat a grill pan or skillet over medium-high. Cook chicken strips 3–4 minutes per side until fully cooked. Let rest.
  3. In a small bowl, mix Greek yogurt, lemon juice, dried herbs, minced garlic, salt, and pepper. Thin with water if needed.
  4. Arrange salad greens, tomatoes, basil, and cucumber in a bowl or on a plate.
  5. Top with grilled chicken strips.
  6. Drizzle yogurt sauce over the top and add optional toppings.
  7. Serve immediately.
