Ingredients
For the Chicken:
- 2 boneless, skinless chicken breasts (sliced into strips)
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1/2 tsp ground cumin
- 1/2 tsp garlic powder
- 1/4 tsp chili powder
- Salt and black pepper to taste
For the Salad:
- 2 cups mixed salad greens
- 1 cup cherry tomatoes
- A handful of fresh basil leaves
- 1/2 cup sliced cucumber (optional)
For the Yogurt Sauce:
- 1/2 cup Greek yogurt
- 1 tsp lemon juice
- 1/2 tsp dried mint or oregano
- 1 garlic clove, finely minced
- Salt and pepper to taste
Optional Toppings:
- Crumbled feta
- Toasted seeds or nuts
- Olive oil or balsamic glaze
Instructions
- Combine olive oil and all spices in a bowl. Add chicken strips and toss to coat. Marinate for at least 15 minutes.
- Heat a grill pan or skillet over medium-high. Cook chicken strips 3–4 minutes per side until fully cooked. Let rest.
- In a small bowl, mix Greek yogurt, lemon juice, dried herbs, minced garlic, salt, and pepper. Thin with water if needed.
- Arrange salad greens, tomatoes, basil, and cucumber in a bowl or on a plate.
- Top with grilled chicken strips.
- Drizzle yogurt sauce over the top and add optional toppings.
