Ingredients

  • 4 slices thick-cut bacon, chopped
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 4 cups diced Yukon Gold or Russet potatoes
  • 4 cups chicken broth
  • 1 cup whole milk or half-and-half
  • 1 tbsp all-purpose flour (optional)
  • 1 to tbsp Cajun seasoning
  • ½ tsp smoked paprika
  • Salt and black pepper, to taste
  • 1 tbsp chopped fresh chives, plus more for garnish
  • ½ cup shredded sharp cheddar cheese
  • Optional: ½ cup corn kernels, ¼ tsp cayenne, splash of hot sauce

Instructions

  1. In a large pot or Dutch oven, cook chopped bacon over medium heat until crispy. Remove with a slotted spoon and drain on paper towels. Reserve 1-2 tbsp of bacon fat in the pot.
  2. Add diced onion to the pot and sauté for 3–4 minutes until soft. Add minced garlic and sauté 30 seconds more.
  3. Stir in flour (if using) and cook 1 minute. Add Cajun seasoning, smoked paprika, salt, and pepper.
  4. Pour in chicken broth and bring to a simmer. Add diced potatoes and cover. Cook 15–20 minutes until potatoes are fork-tender.
  5. Reduce heat and stir in milk or half-and-half. Simmer 5–7 minutes more. For extra creaminess, blend a portion with an immersion blender.
  6. Taste and adjust seasoning. Ladle into bowls and top with bacon, cheese, and chives.
