Ingredients
1 pound sirloin or ribeye steak, cut into 1-inch cubes
1 tablespoon olive oil
1 teaspoon smoked paprika
0.5 teaspoon garlic powder
0.5 teaspoon onion powder
Salt and freshly ground black pepper, to taste
1 tablespoon butter (for finishing)
1 tablespoon butter (for sauce)
4 cloves garlic, minced
1 cup heavy cream
0.5 cup grated Parmesan cheese
0.25 cup sun-dried tomatoes, finely chopped
2 tablespoons chopped parsley
0.25 teaspoon crushed red pepper flakes (optional)
Salt and pepper, to taste
10 ounces rotini pasta
Water and salt for boiling
Optional: additional chopped parsley and extra Parmesan for garnish
Instructions
1. Bring a large pot of salted water to a boil. Cook rotini until al dente, drain, and set aside. Reserve ½ cup pasta water.
2. Pat steak bites dry. Toss in a bowl with olive oil, smoked paprika, garlic powder, onion powder, salt, and pepper.
3. Heat a skillet over medium-high heat. Sear steak in batches for 2–3 minutes per side. Add 1 tbsp butter at the end. Set aside to rest.
4. In the same skillet, reduce heat to medium. Add 1 tbsp butter and sauté minced garlic for 30–45 seconds.
5. Stir in chopped sun-dried tomatoes. Pour in heavy cream and bring to a simmer.
6. Add Parmesan cheese, crushed red pepper, salt, and pepper. Stir until cheese melts and sauce thickens slightly.
7. Add cooked rotini and toss to coat. Use reserved pasta water to loosen sauce if needed.
8. Return steak bites to the pan or serve over the pasta. Garnish with parsley and extra Parmesan.
Notes
Use freshly grated Parmesan for the smoothest, richest sauce.
Let steak rest before slicing or serving—it locks in the juices.
Reserve pasta water—it’s perfect for thinning the sauce without losing flavor.
