Ingredients

  • 1 lb flank or skirt steak
  • 2 tbsp olive oil
  • 2 tbsp lime juice
  • 2 garlic cloves, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and black pepper, to taste
  • 8 small corn tortillas
  • 1/2 cup sour cream
  • 12 chipotle peppers in adobo sauce
  • 1 tbsp lime juice (for crema)
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup diced white onion
  • Lime wedges, for serving

Instructions

  1. In a bowl, whisk together olive oil, lime juice, garlic, cumin, chili powder, salt, and pepper.
  2. Place steak in a dish or bag, pour marinade over it, and refrigerate for at least 30 minutes.
  3. Blend sour cream, chipotle peppers, and lime juice until smooth. Chill until ready to serve.
  4. Heat a grill pan or skillet over medium-high. Cook steak 3–5 minutes per side. Rest for 5 minutes.
  5. Slice steak thinly against the grain.
  6. Warm tortillas in a dry skillet or over a flame until slightly charred.
  7. Assemble tacos with steak, crema, onion, cilantro, and a squeeze of lime.
