Ingredients
- 1 lb ground pork (or chicken/beef)
- 1 lb baby bok choy, chopped (separate stems and leaves)
- 2 tbsp cooking oil
- 4 cloves garlic, minced
- 1-inch ginger, minced
- 1 small onion (optional)
For the Sauce:
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tbsp hoisin sauce (optional)
- 1 tsp sesame oil
- 1 tbsp cornstarch mixed with 2 tbsp water
- 1/2 tsp sugar
- 1/4 tsp ground pepper
- 1/2 cup water or chicken broth

Instructions
- Wash and chop bok choy, separating stems from leaves.
- In a bowl, combine all sauce ingredients and stir well.
- Optional: Marinate ground meat with 1 tsp soy sauce and pinch of sugar.
- Heat 1 tbsp oil in a wok/skillet. Cook ground meat until browned. Set aside.
- Add remaining oil to the pan. Sauté garlic, ginger, and onion until fragrant.

- Add bok choy leaves. Cook another 1-2 minutes until wilted.
- Return meat to the pan. Mix well.
