- 3/4 cup sour cream or Greek yogurt
- 1 1/4 cups strawberry puree (fresh or thawed frozen, reduced slightly if very watery)
For frosting:
- 1 cup unsalted butter, softened
- 3 1/2 cups powdered sugar
- 1/3 cup strawberry puree
- Optional: Fresh strawberries for garnish
Instructions
- Preheat oven to 350°F (175°C). Grease and line a 9×13-inch baking pan.
- In a bowl, whisk together flour, baking powder, baking soda, and salt.
- In a large bowl, beat butter and sugar until light and fluffy (2–3 minutes).
- Add eggs one at a time, then stir in vanilla.
- Mix in the strawberry puree and sour cream until smooth.
- Gradually add dry ingredients to the wet mixture, mixing just until combined.
- Pour batter into prepared pan and smooth the top.
- Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
- Cool cake completely before frosting.
- For the frosting: Beat butter until creamy. Add powdered sugar gradually, then mix in strawberry puree until smooth and fluffy.
