Ingredients

2 cups all-purpose flour

2 tablespoons granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

2 large eggs

1 3/4 cups whole milk

1/3 cup vegetable oil or melted butter

1 teaspoon vanilla extract

1 tablespoon red food coloring

8 ounces cream cheese, softened

1/3 cup powdered sugar

1/2 teaspoon vanilla extract

2 tablespoons sour cream (optional)

1 cup strawberries, chopped or whole

2 tablespoons sugar

1/2 cup whipped cream or vanilla yogurt (optional)

Powdered sugar for dusting

Instructions

1. In a bowl, combine softened cream cheese, powdered sugar, vanilla extract, and sour cream. Beat until smooth and chill the filling.

2. In a separate bowl, whisk together flour, sugar, baking powder, and salt. In another bowl, mix eggs, milk, oil or butter, vanilla, and red food coloring. Combine wet and dry ingredients gently.

3. Preheat the waffle maker and lightly grease it to prevent sticking.

4. Pour half the batter into the waffle iron, spoon in cheesecake filling, and cover with remaining batter. Cook until golden and crisp.

5. Mix strawberries with sugar and let sit or warm slightly on the stove.

6. Top the waffles with strawberries, whipped cream or yogurt, and powdered sugar. Serve immediately.

Notes

Always soften the cream cheese before mixing for a smooth filling.

Don’t overfill the waffle iron to avoid leaks or uneven cooking.

For extra decadence, top with graham cracker crumbs or a drizzle of syrup.
