Ingredients

For the Dough:

  • 3 ½ cups all-purpose flour (plus more for dusting)
  • 1 packet (2 ¼ tsp) active dry yeast
  • ¾ cup warm milk (100–110°F / 38–43°C)
  • ¼ cup granulated sugar
  • 1 egg, room temperature
  • 1 egg yolk, room temperature
  • ⅓ cup unsalted butter, melted and slightly cooled
  • ½ tsp salt

For the Filling:

  • ¾ cup finely chopped fresh strawberries
  • ½ cup brown sugar, packed
  • 1 tbsp ground cinnamon
  • 3 tbsp unsalted butter, softened
  • 1 tbsp cornstarch
  • Optional: 1 tsp vanilla extract

For the Glaze:

  • ¾ cup powdered sugar
  • 23 tbsp milk or cream
  • ½ tsp vanilla extract
  • Optional: 2 oz cream cheese, softened

Instructions

  1. In a mixing bowl, combine warm milk and sugar. Sprinkle yeast over top. Let sit 5–10 mins until foamy.
  2. Mix in egg, egg yolk, melted butter, and salt. Add flour gradually, mixing until a soft dough forms.
  3. Knead for 8–10 minutes (by hand or stand mixer). Dough should be smooth and elastic.
  4. Place dough in an oiled bowl, cover, and let rise 1–1.5 hours or until doubled.
  5. While rising, mix brown sugar, cinnamon, and cornstarch. Set aside strawberries and softened butter.
  6. Roll dough into a 14×10 inch rectangle. Spread with butter, sprinkle sugar mix, and scatter strawberries.
  7. Roll dough into a log. Slice into 8–10 pieces. Place in greased baking dish.
  8. Let rolls rise again for 30–45 mins until puffy.
  9. Bake at 350°F (175°C) for 22–25 mins until golden.
  10. Cool slightly. Mix glaze ingredients and drizzle over warm rolls. Garnish with fresh berries if desired.
