Ingredients
1 box brownie mix (or homemade equivalent for a 9×13 pan)
16 oz cream cheese, softened
1/2 cup granulated sugar
2 large eggs
1 tsp vanilla extract
1/2 cup strawberry sauce or strawberry puree
1 cup crushed vanilla cookies
1/2 cup freeze-dried strawberries, crushed
1/2 cup mini marshmallows (optional)
Instructions
1. Preheat oven to 350°F (175°C) and line a 9×13-inch pan with parchment paper.
2. Prepare brownie batter according to box or recipe instructions and spread evenly in pan.
3. Bake brownie layer for 20–22 minutes until just set. Let cool slightly.
4. Beat softened cream cheese in a bowl until smooth.
5. Add sugar and vanilla extract. Mix well.
6. Beat in eggs one at a time until fully combined.
7. Pour cheesecake mixture over cooled brownie layer.
8. Drop spoonfuls of strawberry sauce across the top and swirl gently.
9. Mix crushed cookies and freeze-dried strawberries in a bowl.
10. Sprinkle mixture evenly on top, adding marshmallows if using.
11. Bake again for 25–30 minutes, until cheesecake is set with a slight jiggle.
12. Cool at room temperature, then chill in refrigerator at least 4 hours.
13. Lift from pan using parchment paper, slice, and serve.
14. Store leftovers in fridge or freeze for later.
Notes
Always use room temperature cream cheese to prevent lumps.
Don’t over-swirl the strawberry sauce—it should look marbled.
For best slicing results, chill completely and clean your knife between each cut.
