Ingredients

1 ½ cups cream cheese, softened

½ cup powdered sugar

1 teaspoon vanilla extract

⅓ cup strawberry jam

½ cup white chocolate, melted

1 ½ cups crushed golden Oreos or vanilla cookies

¼ cup crushed freeze-dried strawberries (optional)

3 tablespoons unsalted butter, melted

Instructions

1. In a large bowl, beat the softened cream cheese until smooth and fluffy.

2. Add powdered sugar and vanilla extract, and mix until combined and silky.

3. Fold in the melted white chocolate and stir well.

4. Cover and refrigerate the mixture for 1 hour to firm up.

5. Scoop 1 tablespoon of the chilled mixture, flatten slightly, and place a small dab of strawberry jam in the center.

6. Wrap the cheesecake mixture around the jam and roll into a ball.

7. Place the balls on a parchment-lined tray and freeze for 20–30 minutes.

8. In a food processor, pulse crushed cookies and freeze-dried strawberries until finely ground.

9. Combine crumbs with melted butter to create the coating.

10. Roll the firm cheesecake bites in the coating, pressing gently to adhere.

11. Serve immediately or refrigerate until ready to enjoy.

Notes

Make sure the cream cheese is at room temperature for easier mixing.

Don’t skip freezing before coating to help the bites hold their shape.

Double coat the bites for extra crunch and color.
