Ingredients
- 2 slices sourdough bread
- 1/2 cup ricotta cheese
- 1/4 cup sun-dried tomatoes (oil-packed, drained and chopped)
- 1/2 cup fresh spinach (lightly sautéed)
- 1 tablespoon butter or olive oil (for grilling)
- Salt and pepper to taste
- Optional: pinch of red pepper flakes or grated garlic for ricotta
Instructions
- Sauté the spinach in a small skillet over medium heat for 1–2 minutes until wilted. Set aside and blot dry.
- In a small bowl, mix ricotta with salt, pepper, and optional seasonings.
- Spread the ricotta mixture evenly onto one slice of bread.
- Layer the sautéed spinach and chopped sun-dried tomatoes on top of the ricotta.
- Close the sandwich with the second slice of bread.
- Butter the outside of both slices.
- Grill the sandwich in a skillet over medium-low heat for 3–4 minutes per side, pressing gently, until golden brown and heated through.
- Let rest for a minute before slicing and serving.
