Ingredients

1 1/2 cups all-purpose flour

1 cup granulated sugar

1/2 cup brown sugar

2 large eggs

3/4 cup unsalted butter, melted

1 teaspoon vanilla extract

1 cup chopped pecans (toasted preferred)

1 teaspoon baking powder

1/2 teaspoon salt


Instructions

1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line with parchment if desired.

2. Toast chopped pecans in a dry skillet for 4–5 minutes over medium heat until fragrant. Let cool.

3. In a large bowl, whisk together flour, granulated sugar, brown sugar, baking powder, and salt.

4. In a separate bowl, whisk the eggs. Add melted butter and vanilla, stirring until smooth.

5. Pour wet mixture into the dry ingredients and stir gently until just combined—do not overmix.

6. Fold in toasted pecans, reserving a few for topping if desired.

7. Pour batter into prepared loaf pan, smoothing the top. Sprinkle with extra pecans if using.

8. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.

9. Let cool in pan for 15 minutes, then remove to a wire rack to cool completely.

10. Slice and serve once fully cooled.

Notes

Toasting the pecans before baking brings out their rich, buttery flavor—don’t skip this step!

Let the butter cool slightly after melting so it doesn’t cook the eggs when mixed.

For added texture and sparkle, sprinkle turbinado sugar over the top before baking.
