Ingredients

For the Steak:

  • 1 lb sirloin steak (or flank, ribeye), thinly sliced
  • Salt and black pepper to taste
  • 1 tbsp olive oil

For the Pasta & Sauce:

  • 8 oz fettuccine or spaghetti
  • 4 garlic cloves, minced
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp brown sugar
  • 1 tsp red pepper flakes (adjust to taste)
  • 1 tbsp butter
  • 2 tbsp chopped parsley (optional)
  • 12 tbsp reserved pasta water (as needed)

Optional Garnishes:

  • Chili oil or Sriracha
  • Green onions, chopped
  • Sesame seeds

Instructions

  1. Bring a large pot of salted water to a boil. Cook pasta until al dente. Reserve 1/4 cup pasta water, drain, and set aside.
  2. Season steak with salt and pepper. Slice thinly against the grain.
  3. Heat oil in a heavy skillet over medium-high heat. Sear steak in batches, 2–3 minutes per side. Set aside.
  4. In the same pan, reduce heat to medium. Add butter, then garlic. Sauté until fragrant (30–45 seconds).
  5. Stir in soy sauce, oyster sauce, brown sugar, and red pepper flakes. Let the sauce simmer for 1 minute.
  6. Toss in cooked pasta. Add reserved pasta water as needed to loosen the sauce.
  7. Return steak to the pan. Mix until everything is coated and heated through.
  8. Serve hot with optional garnishes like parsley, chili oil, or sesame seeds.
