Ingredients
1.5 lbs boneless skinless chicken thighs or breasts
0.5 cup sweet chili sauce
2 tablespoons soy sauce
1 tablespoon honey
1 tablespoon rice vinegar
2 cloves garlic minced
1 teaspoon grated fresh ginger
1 tablespoon olive oil
0.75 cup full-fat coconut milk
1 lime juiced
1 teaspoon lime zest
1 tablespoon honey or maple syrup
1 teaspoon sriracha or chili paste
1 pinch salt
0.5 teaspoon cornstarch
2 cups cooked jasmine rice
lime wedges
fresh chopped cilantro
extra sriracha or sweet chili sauce (optional)

Instructions
1. In a bowl, mix sweet chili sauce, soy sauce, honey, rice vinegar, garlic, and ginger. Add chicken and marinate for at least 30 minutes.
2. In another bowl, whisk coconut milk, lime juice, lime zest, honey (or maple), sriracha, and salt. Add cornstarch if thickening. Simmer gently if needed.
3. Rinse and cook jasmine rice. Once done, fluff and season with a little lime juice and salt if desired.
4. Preheat grill or grill pan. Oil lightly. Grill chicken 4–5 minutes per side until cooked and slightly charred. Rest before slicing.
