1 cup mashed sweet potatoes

1 cup cottage cheese

2 large eggs

3/4 cup whole wheat flour

1 teaspoon baking powder

1/4 teaspoon nutmeg

1/4 teaspoon salt

1/3 cup chopped walnuts


Instructions

1. Peel, dice, and boil or roast sweet potatoes until fork-tender. Mash until smooth and let cool.

2. Preheat the oven to 350°F (175°C). Grease an 8×8 inch baking dish or line it with parchment paper.

3. In a large mixing bowl, whisk together mashed sweet potatoes, cottage cheese, eggs, maple syrup, and vanilla extract until smooth.

4. In another bowl, combine whole wheat flour, baking powder, cinnamon, nutmeg, and salt.
