Description

A hearty, one-pan dish featuring savory ground beef, tender sweet potatoes, and fresh zucchini, all sautéed with onions, garlic, and spices. Perfect for busy weeknights or nutritious meal prep.


Ingredients

  • 1 lb ground beef (85% lean preferred)
  • 2 medium sweet potatoes, peeled and diced
  • 2 medium zucchinis, sliced into half-moons
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp smoked paprika (optional)
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Heat 1 tbsp olive oil in a large skillet over medium heat.
  2. Add diced sweet potatoes and cook for 10–12 minutes until tender and caramelized. Remove and set aside.
  3. In the same skillet, add remaining olive oil if needed. Sauté diced onion for 2 minutes, then add minced garlic and cook for 30 seconds.
  4. Add ground beef, breaking it apart as it browns. Season with salt, pepper, and paprika.
  5. Once beef is fully browned, stir in zucchini and cook for 5–7 minutes until tender but not mushy.
  6. Return sweet potatoes to the skillet and mix everything thoroughly. Cook for 2–3 more minutes.
  7. Taste and adjust seasoning. Garnish with fresh parsley if desired.
  8. Serve warm.
