A hearty, one-pan dish featuring savory ground beef, tender sweet potatoes, and fresh zucchini, all sautéed with onions, garlic, and spices. Perfect for busy weeknights or nutritious meal prep.
Ingredients
- 1 lb ground beef (85% lean preferred)
- 2 medium sweet potatoes, peeled and diced
- 2 medium zucchinis, sliced into half-moons
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp smoked paprika (optional)
- Salt and pepper to taste
- Chopped fresh parsley for garnish (optional)
Instructions
- Heat 1 tbsp olive oil in a large skillet over medium heat.
- Add diced sweet potatoes and cook for 10–12 minutes until tender and caramelized. Remove and set aside.
- In the same skillet, add remaining olive oil if needed. Sauté diced onion for 2 minutes, then add minced garlic and cook for 30 seconds.
- Add ground beef, breaking it apart as it browns. Season with salt, pepper, and paprika.
- Once beef is fully browned, stir in zucchini and cook for 5–7 minutes until tender but not mushy.
- Return sweet potatoes to the skillet and mix everything thoroughly. Cook for 2–3 more minutes.
- Taste and adjust seasoning. Garnish with fresh parsley if desired.
- Serve warm.
