Ingredients
1 cup all-purpose flour
1 cup granulated sugar
2 tablespoons unsweetened cocoa powder
1/4 teaspoon salt
1/2 teaspoon baking soda
1/2 cup buttermilk
1/2 cup vegetable oil
2 large eggs
1 teaspoon vanilla extract
1 teaspoon red gel food coloring
8 ounces cream cheese, softened
1/3 cup powdered sugar
1/2 teaspoon vanilla extract
Instructions
1. Preheat oven to 350°F (175°C) and line a mini muffin pan with paper liners or grease it well.
2. In a bowl, whisk together sugar, vegetable oil, eggs, vanilla extract, and buttermilk until smooth.
3. In another bowl, sift together flour, cocoa powder, baking soda, and salt.
4. Gradually add dry ingredients to wet ingredients and stir until just combined.
5. Mix in red food coloring until desired shade is reached.
6. In a separate bowl, beat softened cream cheese until smooth, then mix in powdered sugar and vanilla extract.
7. Spoon 1 tablespoon of red velvet batter into each muffin cup.
8. Add 1 teaspoon of cream cheese filling on top and lightly swirl with a toothpick.
9. Bake for 12–15 minutes, or until edges are set and centers are slightly soft.
10. Cool in the pan for 5–10 minutes, then transfer to a wire rack to cool completely.
Notes
Make sure cream cheese is softened to room temperature for a smooth swirl.
